Kentucky Derby Tartlet
Qty
36             Frozen Mimi Phyllo Shells
1/3 Cup    Semisweet Chlocate Mini Morsels
1   Cup      Finely Chopped Pecans, Toasted
3/4 Cup     Firmly Packed Light Brown Sugar
1   Tbsp    Butter
1/4 Cup     Bourbon
1   Large   Egg, Beaten

Arrange shells on a lighty greased 15x10 jellyrool pan.
Sprinkle chocolate into shells. Stir pecans and next 4 ingredients
into shells. Bake @ 350 degrees for 20 min. Store in airtight container
in freezer up to 1 month.

Transparent Pudding
Qty.
                  Frozen tart Shells
3                Eggs
1-1/2 Cup  Sugar
1 Stick       Butter
1 Tbsp      Vinegar
1 tsp          Vanilla

Beat eggs slightly with sugar, vinegar and vanilla.
Cut butter into chunks and cook on med. heat stirring
constanly until butter melts. Pour into shells and bake
@ 325 for 30 min. Can freeze up to 2 months
